Solera offers private dining in Port Douglas for small gatherings and special occasions. The usual formats are four-course and six-course menus with Spanish roots, built around season, product and the table itself. Beyond that, each booking can open into something more bespoke, whether that means a shared-style meal, a paella for ten, or a format shaped around the occasion.

Solera is a personal expression.
Daniel Gallego comes from the south of Spain, where food, time and table carry their own rhythm.
Raised in Andalucia and shaped by years in professional kitchens, his cooking draws from memory, discipline and a strong sense of place.
Life across England, the Netherlands, Spain and Australia has widened that perspective, while the centre of gravity remains firmly Andalusian.
The approach is simple: respect the product, cook with intention, and keep things honest.
